THE SOIL Our Sancerre Chavignol comes from the slopes of Chavignol and Verdigny. They are made up of clay-limestone soils. Work is being done to control yields (cover cropping between rows, use of organic fertilizers). VINIFICATION AND AGEING The vinification is carried out by terroir in order to preserve the uniqueness of each one. Long fermentation at low temperature. Blending so that the respective qualities of each terroir complement each other and produce balanced wines. A maturation on fine lees for 8 to 10 months. TASTING Eye: Very pale yellow dress Nose: First nose, delicate, with a hint of toasted sesame. It then opens with citrus notes and the indulgent notes of banana and English sweets. Palate: Aromatic attack dominated by yellow fruits, complemented by a lovely freshness that adds volume.
