THE SOIL Our Sancerre Rouge "Chavignol" is made from vines planted with Pinot Noir. The soil composed of limestone and clay gives our wine its structure. VINIFICATION AND AGEING This wine comes from a 40-day maceration in a vat at a temperature of around 25 degrees. In order to best represent the typicality of a Sancerre Pinot Noir, aging is carried out for 12 to 15 months in stainless steel tanks and 500-liters half-muids. TASTING Our Sancerre Rouge has a nose of blackcurrant and a palate of very ripe red fruits (sour cherry and cherry pit). During the tasting, a balance is created between the wine's tannin (at the beginning of the palate) and its roundness (at the end of the palate). As they age, the tannins gradually give way to roundness. To be appreciated, these wines should be tasted between 2 and 5 years at a temperature between 15 and 18 degrees.
